Mini S’mores Cups

Updated: Apr 27, 2019

These little s’mores cups are the perfect size for if you just want a bite or two of something sweet and nostalgic.

Best served right out of the fridge, you can prepare these little guys in advance and then just put them on a serving tray when you’re ready for dessert.

Makes 12 s'mores cups

  • 3 tbsp unsalted butter, melted

  • 1 tbsp sugar

  • 3/4 cups graham cracker crumbs

  • 1/2 cup marshmallow fluff

  • 1/3 cup chocolate chips

  1. Mix sugar and graham cracker crumbs into butter until well combined.

  2. Portion out 1 packed tbsp of graham cracker mixture into each well of a mini cupcake tray then using your fingers, press the mixture into a cup shape then set tray in the fridge to set for at least 45 minutes.

  3. You should be able to pop these out of the tray by pressing both of your thumbs along the top edge closest to you. If they are a bit stuck, use a butter knife to break the suction a little bit by barely putting the edge between the cup and the tray and running it along about 1/3 - 1/2 of the diameter. You really don't need to get much of the knife in there since you don't want to crumble the cup.

  4. Put marshmallow fluff into a piping back or zip top back and cut the corner off to fill each cup with marshmallow, then set them in the fridge while you do the next step.

  5. Put chocolate chips in a microwave safe bowl and heat for 30 seconds at a time, stirring each time, until chocolate is completely melted.

  6. Pour a bit of melted chocolate onto each cup and use the back of your spoon to gently spread the chocolate out over top of the marshmallow.

  7. Put tray back in the fridge to set for at least 20 minutes before serving.
