Candied Lemon Slices

These little gems make a beautiful garnish, or a sweet snack. You could also change your citrus up and candy some lime or orange slices instead.


  • 2 lemons

  • 2 cups water

  • 2 cups sugar


  1. Thinly slice 2 lemons.Set a pot of water to boil.

  2. Prepare a medium bowl with cold water and several ice cubes.

  3. Once water has reached a rolling boil, put lemon slices into it and boil for 1 minute, then immediately transfer to ice water for a few minutes.

  4. Add sugar and water to a medium skillet and bring to a boil on medium heat, stirring occasionally. Once it boils, add lemon slices in a single layer and lower heat to keep a simmer going. As it simmers your lemon slices will slide around a bit, just separate them every 10 minutes or so.

  5. Once the lemon slices have been simmered for about 50 minutes, use metal tongs to transfer them to a cooling rack with wax paper set underneath it. If the sugar syrup starts to turn a caramel colour, remove the slices immediately to avoid burning.

  6. Leave to cool and dry for at least 24 hours. They’ll still be a bit sticky even after the 24 hours. Pick the slices up and readjust them once part way through to make sure they don't get completely glued to your cooling rack.
