Acorn squash oven baked fries
Updated: Apr 27, 2019
A tasty and nutritious alternative to oven baked fries if you're looking to change things up a little bit!

Disclaimer: acorn squash is harder to cut than sweet potato. Watch your fingers! I find it easiest to cut using a knife that has ridges (like this).
Ingredients:
1 acorn squash
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp sea salt
Instructions:
Preheat oven to 425F and line a baking sheet with tinfoil.
Cut top and bottom off of the acorn squash, then cut it in half along one of the "seams". Using a spoon, remove seeds and pulp. Cut squash into wedges along remaining seams then use a vegetable peeler to remove peel. Cut each wedge into 3-4 smaller wedges - watch your fingers!
Put acorn squash into a large bowl and add olive oil, garlic powder, and paprika then mix well.
Arrange acorn squash slices on prepared baking sheet in a single layer, then sprinkle with sea salt.
Bake for 20 minutes, then test that fries are done by piercing with a fork - the fork shouldn't encounter any resistance. If they aren't quite done yet, return to the oven or another 2-5 minutes until cooked through. There is no need to flip these during baking.
